I am a lad from the country who had a dream to become a chef, set out to make it happen and I am now living that dream.


None of that would have been possible if it was not for my family.

My family means everything to me and they have all played a massive part in helping me become the person and the chef that I am today. 

They are the people who helped me discover my passion for cooking and then helped me develop that passion and turn it into a career and a life-long friend. 

They are the inspiration behind many of my dishes and menus.

My family and cooking are the two main reasons I am where I am today.

They have seen me go from the humble surroundings of country Victoria to working in some of the best restaurants all over the world.

My family and cooking has changed my life, but my life changing hasn’t changed me.

If anything, my transformation from country boy to executive chef in one of the city's most vibrant and innovative restaurants has inspired my cooking and that is evident on my menus.

They say you can take the boy out of the country, but you can’t take the country out of the boy...this is true.

There are so many things I grew up in the country doing that I still do to this very day, despite living in the city.

I still head out and handpick the freshest ingredients I can find and I still put as much love into my meals as we did as a family cooking dinner together at home.

A lot of my dishes are inspired by my favourite childhood memories, traditional family recipes that I have given a slightly quirky twist.

From the days of cooking family meals at home to now cooking for a restaurant full of household names, nothing has really changed.

Because for me there is no better feeling than seeing a meal bring people together and seeing the unmistakable look of satisfaction beaming from their faces.

That is the exact point in time where I know I am doing what I was born to do.
